Vadai is my favorite deep fried item.. So perfect for tiffin or for breakfast. This is the sweet cousin of the Spicy Medu Vadai. This gets its taste and sweetness from the honey added. You could add more honey if desired. I saw this in a TV show and loved it.. It will be in darker color compared to its spicy cousin due to its sugar content..

Rava Idli is a very famous tiffin in Tamil Nadu (Southern India). It tastes best when served hot and best accompanied by Tomato urugai or coconut chutney. This recipe will make 14 rava idlis. This rava idli required no soaking time and can be done from start to finish in less than 30 minutes.

So excited to be part of the SNC group which is created by Divya. Idea here is the group is divided into 2 and then each group challenges the other group with a recipe. Now from the Southern team, it is my turn this month to challenge my friends from the North team. The choice for this month is a very healthy and delicious breakfast / tiffin item… It also makes a perfect “lunchbox” food or “travel” food…
Here is the link to the recipe for this month’s challenge for the North Team - Kambu Dosai / Bajra Dosai –Very Healthy Breakfast.. I have given the translation in English / Hindi for most of the ingredients.. Please email me at firstname.lastname@example.org if you have any questions… Please add your post to the linky tool below

Cinnamon is such a good ingredient and is therapeutic when used in baking.. The entire house smells the cinnamon flavor and feels quite soothing.. When Gayathri announced “Cinnamon Swirl Bread” for this month’s eggless baking challenge, I immediately did it.. I did not use the recipe Gayathri suggested but used the recipe from here and loved it.. I got one loaf from the below recipe. You could double the quantity and make 2. Also the original recipe had egg which I replaced.

Every country has their share of authentic breads. Pita bread is from the Mediterranean region and it tastes awesome when baked fresh with hummus.. You could enjoy it with hummus, insert it with falafel, tzazki sauce and salad and that makes a meal. Make these breads and are so perfect as a snack with hummus.. For this month’s We Knead to Bake, Aparna gave us the choice to bake any bread and this is my choice. This is also a perfect snack choice for the “after school snack” for this month’s BM
