Eggless Dinner Rolls / Eggless Lion House Rolls

Some recipes give satisfaction when end result is awesome, some recipes give satisfaction at each and every step.. Most recipes with yeast are of the second category if they are successful, meaning each stage calls for a test and happiness if all is well.. Yeast froths perfectly – yaay!!!, dough kneaded to a smooth and soft dough – yaay!!!, dough rises to double or triple in one hour – yaay!!!, aroma of yeast – yaay!!!, hands are so happy to work with the smooth dough – yaay!!! and when baking, the aroma and the satisfaction – yaay!! and when people see it and say – made this at home!!!!!! – yaay!!!! Now too many yaay!!! This is one such recipe where I felt so happy at each process, but I was tensed at the stage of shaping them into various shapes!!! Some shapes look so good and some not so good!! These dinner rolls is sure to get you appreciation and are so good when served warm brushed with generous butter!!! Serve them with salted butter or hot soup!! This is such a nice challenge that Swathi has chosen for this month’s Baking partners.

Let’s Party – Eggless Bakes and Treats

I am so excited to announce my 5th Guest host event – Let’s Party – Eggless Bakes and Treats. Make sure you submit vegetarian dishes (no eggs allowed) only. November December is a month of baking, parties, sharing and fun. So bring all those treats to this event… Rules for the Event:
  1. I have chosen "Eggless Bakes and Treats" as a theme for the month of Nov-Dec at "Let's Party". Dishes allowed are baked goodies, Non-baked sweets, savories .. So anything from Jamun to muffin to breads to mixture are welcome!!!

Dry Fruits Burfi / Khajur Pak / Dates Roll

How about a sweet which is so healthy, so delicious, so quick, so easy and looks so good!! All are true about this dates roll. Imagine a sweet with no sugar (of course dates has sweetness) and very very little ghee… I got this recipe from here and many very little changes. I wanted to add this sweet for Diwali on my blog and am very happy to include it in the BM under Kids – delight – healthy makeover.

Ingredients
Dates - 350 grams
Raisins - 1/4 cup
Ghee - 2 table spoons
Chopped Nuts - 1/2 cup
Coconut - 3 table spoons
Poppy Seeds - 1 table spoon
Cardamom Powder - 1/4 tea spoon
Nutmeg (grated) - A pinch
Edible Camphor - A pinch (optional)

Method
Puree the raisins and set aside. You can also chop it fine.
Heat a table spoon ghee in a pan and add a table spoon of coconut and then poppy seeds.
Roast for just a little until there is little color change.
Add the chopped dates and raisins and cook on low heat till it gets little tender and mushy..
Keep stirring to ensure that it does burn. Add cardamom powder, nutmeg and edible camphor and remove from heat.
Let it cool
Wrap the rolling pin with plastic wrap and the rolling board with ziploc as it will stick very badly
Roll it with hand by pressing to a thin layer.
You can also apply little ghee in the palms and press it with the palm to make to a thin sheet. I made it with my hands.
spread the nuts over the rolled dates sheet and press the nuts a little to ensure that they are stuck on the dates sheet.
Now roll the dates sheet to a tight cylinder making sure that it is a tight cylinder to a log..
Cut into small pieces and the dry fruits burfi is ready
Roll them on dry coconut for extra garnish and elegance.

Kezhvaragu Oats Samba Godumai Idli

Kezhvaragu Oats Samba Godumai Idli is a quick and easy breakfast or tiffin item. It tastes best when served hot and best accompanied by sambar, rasam or tomato urugai. This resembles and also tastes like rava idli, but has a lot of goodness attached. It is very filling and one can eat maximum 4 for dinner and 2 for breakfast. I got this from here and this healthy is yummy too.. This recipe will yield 16 idlis. Also the idlis will raise a lot, so be sure to fill the mould to 75% – 80% only.
